Gluten-free Shortbread Cookies with Marzipan

Ingredients

  • 250 g gluten-free flour mix, (e.g. Schär Mix C Pâtisserie)
  • 100 g butter
  • 80 g marzipan
  • 75 g sugar
  • 2 tbsp milk
  • 1 egg
  • 1 egg yolk
  • 1/2 tsp xanthan gum
  • gluten-free flour mix, to dust

Method

  • 1)

    Mix the flour with sugar and xanthan gum in a bowl. Add the butter and marzipan in small pieces. Then add the egg and egg yolk and knead everything into a smooth, still relatively soft dough. Wrap the dough in foil and allow to rest in the refrigerator at least an hour.

  • 2)

    Preheat the oven to 170 degrees Celsius conventional heating (top-bottom heat).

  • 3)

    Line a baking tray with baking paper.

  • 4)

    On a floured work surface, roll out the dough to a thickness of 2 to 3 mm and cut out any desired shapes.

  • 5)

    Brush the cookies with milk.

    • Optionally: top the cookies with chopped nuts or almonds.
  • 6)

    Bake in the oven for 12 to 14 minutes.

  • 7)

    After baking, the cookies still soft. Therefore, allow the cookies to cool completely.

  • 8)

    Decorate as desired with chocolate glaze, icing or sprinkles.

  • 9)

    Store airtight in a cookie jar.
