Gluten-free Mini Salted Caramel Tarts

Ingredients

Gluten-free tartlet shells

Caramel topping

  • 150 g sugar
  • 60 ml water
  • 60 ml whipping cream, at room temperature
  • 35 g butter, at room temperature
  • pinch sea salt

Method

Gluten-free tartlet shells

  • 1)

    Make the gluten-free tartlets according to the recipe. Let the mini tart shells cool completely before filling them.

Salted caramel topping

  • 1)

    Heat the sugar with the water. Make sure not to stir, otherwise the sugar may crystallize. Once the caramel turns golden, remove the pan from the heat and add the whipping cream. Put the pan back on the heat and cook for another two minutes, stirring constantly.

  • 2)

    Remove the pan from the heat again and add the butter and salt. Mix well and allow to cool slightly. Spread the caramel sauce over the mini tarts and put in the refrigerator. After 30 minutes sprinkle with some sea salt to decorate.

    Leave to cool before serving.

    Once prepared, store the pastries airtight in the refrigerator for 2-3 days.
