Gluten-free Salted Caramel Chocolate Tartlets

Ingredients

Gluten-free tartlet shells

Caramel topping

  • 150 g sugar
  • 60 ml water
  • 60 ml whipping cream, at room temperature
  • 35 g butter, at room temperature
  • pinch sea salt

Chocolate topping

  • 80 g dark chocolate
  • 80 ml whipping cream
  • sea salt, to decorate

Method

Gluten-free tartlet shells

  • 1)

    Make the gluten-free tartlets according to the recipe. Let the mini tart shells cool completely before filling them.

Salted caramel topping

  • 1)

    Heat the sugar with the water. Make sure not to stir, or else the sugar may crystallize. Once the caramel turns golden, remove the pan from the heat and add the whipping cream. Put the pan back on the heat and cook for another two minutes, stirring constantly.

  • 2)

    Remove the pan from the heat again and add the butter and salt. Mix well and allow to cool slightly. Spread the caramel sauce over the mini tarts and put in the refrigerator for a while (approx. 30 min) to set.

Chocolate topping

  • 1)

    Bring the whipping cream to a boil. Add the chocolate and stir well. Allow to cool slightly. Pour the chocolate ganache over the caramel topping. Let set again in the refrigerator. After 15 minutes sprinkle with some sea salt to decorate.

  • 2)

    Once prepared, store the pastries airtight in the refrigerator for 2-3 days.
