Super-delicious gluten-free plum cake, a great way of using plums when in-season. Use quality plums that are ripe but not overly soft and juicy yet. You want to use fruits that are more firm than you might select if eating them raw.

Serve with cream or whipped cream or warm with ice cream. This rustic plum cake is a fabulous dessert option.

Ingredients

  • 1,3 kg plums
  • 220 g butter
  • 150 g powdered sugar
  • 1 pinch salt
  • 4 eggs, large
  • 120 g buckwheat flour
  • 150 g corn flour
  • 2 tsp baking powder, baking soda
  • 3 tsp sugar, brown

Method

  • 1)

    Wash the plums, halve and core them. If using a larger kind of plums, quarter them instead of cutting the plums in half.

  • 2)

    Chop the butter and stir together with the powdered sugar and salt for about 6 minutes until smooth and fluffy.

  • 3)

    Whisk the eggs separately and gradually stir them into the butter mixture.

  • 4)

    Mix both flours with baking powder and fold in the mixture.

  • 5)

    Spread the dough on a baking tray lined with baking paper or in an oven form and cover with the plums.

  • 6)

    Sprinkle with brown sugar and bake in a preheated oven at 180°C for 35 minutes.

  • 7)

    Let cooled and sprinkle with powdered sugar.
