Gluten-free Oatmeal Coconut Cookies

Ingredients

  • 200 g oatmeal
  • 150 ml water, hot
  • 55 g coconut, shredded
  • 25 g coconut oil
  • 4 tbsp honey
  • 1 tsp baking powder, gluten-free
  • 1 pinch salt

Method

  • 1)

    Preheat the oven to 190 degrees Celsius conventional heating (top-bottom heat).

  • 2)

    Mix the oatmeal, coconut oil, honey, shredded coconut, baking powder and a pinch of salt in a bowl. Add the hot water and knead into a smooth and little sticky dough.

  • 3)

    With moist hands, roll 24 walnut-sized balls. Press them flat and place them on a baking tray lined with baking paper.

  • 4)

    Bake on the middle shelf of the oven for approximately 25 minutes until golden brown.

  • 5)

    Allow the cookies to cool completely.
