These coconut macaroons have only three ingredients and are super simple to make. Perfect for those who are the true coconut lovers. These cookies are crunchy on the outside and chewy in the middle.

The great thing about these macaroons is that they don’t contain any flour. In this recipe I made basic macaroons with no additional flavors, but of course you can make many variations. For example use some cocoa powder or cocoa nibs, nuts, lime, orange and so on. try out what you like.

Coconut macaroons

  • 4 egg whites, medium
  • 200 g shredded coconut
  • 200 g granulated sugar

    Preheat oven to 170 C and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk the egg whites and sugar until foamy. Add in the shredded coconut and stir gently.

    Using an ice cream scoop or two tablespoons, drop the macaroons on the parchment paper. This recipes equals 20 medium size coconut macaroons. You can make balls using your hands too.

  • 4)

    Bake for 20 minutes until the cookies turn golden on top.

  • 5)

    Cool for about 10 minutes before serving. You can keep them in an airtight container for up to 4 days.
