Gluten-free Oatmeal Cookies With Raisins

Ingredients

  • 100 g rice flour
  • 100 g gluten-free oat flour
  • 75 g gluten-free oatmeal
  • 70 g butter, (Vegan alternative: margarine or vegetable butter)
  • 60 g raisins
  • 6 tbsp maple syrup
  • 4 tbsp almond butter
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1 egg, (Vegan alternative: 50 g apple sauce)
  • 1 pinch salt

Method

  • 1)

    Preheat the oven to 180 °C conventional heating (top-bottom heat). Line a baking tray with baking paper.

  • 2)

    Put all ingredients in a mixing bowl and knead into a compact dough.

    • Is the dough too dry? Add a little extra butter.
    • Is the dough still very sticky? Place the dough in the refrigerator for about 30 minutes.
  • 3)

    Make 14 cookies and flatten them slightly with the palm of your hand. Decorate the cookies with some extra toppings, if desired. Optionally brush the cookie with a little egg yolk or apricot jam.

  • 4)

    Bake the gluten-free oatmeal cookies for about 14 minutes until golden brown.

    Let cool on the baking tray and enjoy!
