This homemade shawarma bread is unbelievably easy and ready in no time. Shawarma bread is also known as pita bread or naan flat bread. I prepared these flat breads in a pan but you could pop them into the oven as well.

Traditionally shawarma bread is filled with thin cuts of marinated with lamb, mutton or chicken. Nowadays shawarma may also be with turkey, beef, or veal. It’s served with chopped or shredded vegetables, pickles and assorted condiments.

For this recipe I used Schär Bread Mix B but you could also use another gluten-free flour blend.

Gluten-free Homemade Shawarma Bread

Ingredients

  • 200 g gluten-free flour mix, (e.g. Schär Mix B Bread)
  • 130 ml water, lukewarm
  • 100 g cream
  • 40 g tapioca starch
  • 7 g yeast, dry
  • 1 tsp psyllium husk powder
  • 1 pinch xanthan gum
  • 1 tbsp olive oil
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • rice flour, for working the dough
  • olive oil, for baking

Method

  • 1)

    Mix the yeast and sugar together, add 130 ml lukewarm water while stirring. Let the yeast-mixture stand for about 10 minutes until bubbles are formed and the yeast is activated.

  • 2)

    Combine the flour, starch, physilium husk, xanthan gum and salt in a mixing bowl.

  • 3)

    Add the yeast-mixture, cream and olive oil and knead everything into a homogeneous dough.

  • 4)

    Cover the bowl with plastic wrap and let the dough rest for 30 minutes.

  • 5)

    Cut the dough into quarters. Form each piece into a ball and roll out on a floured work surface into a round, thin flat bread.

  • 6)

    Brush a frying pan with a little olive oil and bake each bread on medium high heat for about two minutes until golden brown on both sides.

    Serve with toppings of your likings, for example marinated chicken, vegetables and a yogurt-sauce.
