Delicious Italian inspired gluten-free pork tenderloin with smoked ham and mushrooms. This dish is low carb friendly and easy to cook in only 35 minutes. The soft and juicy pork tenderloin is covered in smoked ham, we have used Italian smoked ham for this dish. Mixed mushrooms and thyme finish the dish off. Try a mix of different mushrooms. In this recipe we used 50% chestnut mushroom, 25% oyster mushroom and 25% shiitake but you could use any mushroom you like. Serve with rice or gluten-free pasta if desired.

Ingredients

  • 500 g pork tenderloin
  • 8 g thyme, fresh
  • 100 g smoked ham
  • 200 g mushrooms, mixed
  • 2 onions, small
  • 20 g unsalted butter

Method

    Preheat the oven to 180°C. Fold the thin part of the pork tenderloin towards the middle so that the meat is about the same thickness everywhere. Use half of the thyme the leaves and sprinkle the meat all around with the thyme leaves and pepper. Roll the pork tenderloin into the smoked ham and ensure that the pork tenderloin is completely covered.

    Slice the mushrooms and onions into thin rings. Heat the butter in a frying pan and fry the meat equally on each side for about 4 minutes. Remove the meat from the pan and place in a baking dish. Fry the onions, mushrooms and the rest of the thyme sprigs for 4 minutes in the remaining cooking fat. Add the mixed mushrooms to the meat and cook for 15 minutes in the middle of the oven.

    Take the meat out of the oven, cover it with aluminium foil and let rest for 10 minutes. Slice the meat, remove the thyme sprigs and serve with the mushrooms.
