Gluten-free forest fruit cake

Serves: 6

Tasty forest fruit cake with a light sweet citrus note. In this recipe strawberries and raspberries are used but you could also use blueberries, blackberries or other seasonal berries. In case the desired fruits are not in season then the frozen version is also a good option.

Ingredients

  • 75 g oat flakes
  • 75 g almond flour
  • 2 eggs
  • 1 large apple, grated
  • 100 ml coconut milk
  • 100 ml yogurt
  • 3 tbsp honey
  • 1 tsp vanilla sugar
  • 1/2 orange, juice
  • 1 tbsp cinnamon
  • 1 tbsp baking powder
  • 1 pinch salt
  • 100 g strawberries
  • 100 g raspberries
  • 2 tbsp almonds, chopped

Method

    Preheat the oven to 180 degrees Celsius. Line the baking tin with baking paper.

    Add oat meal, almond flour, baking powder, salt and the cinnamon in a mixing bowl. Then add the grated apple, coconut milks and yogurt. Add the eggs to the bowl and mix everything together to create a fairly firm batter. Then add the vanilla sugar, honey and the juice of half an orange.

    Pour half of the batter into the baking tin. Sprinkle the fruits over. Cover the fruits by pouring the remaining batter over it. Decorate with almond shavings if desired.

    Bake for about 50 minutes until cooked and golden. In case the cake gets to dark cover with aluminum foil halfway through the baking time.

    Tip: you can also freeze these per piece. Put them frozen in a preheated oven and enjoy a delicious pastry at any time!
