Sweet potato mini pizza with pesto and mozzarella. Not a fan of pesto? You could also use a vegetable spread or you can make your own spread, e.g. a pea spread.
Tip: stacked in a closed lunchbox you can easily transport these pizzas. Reheat them in the oven for approx. 10 min. at 160 °C.
