Sweet potato mini pizza with pesto and mozzarella. Not a fan of pesto? You could also use a vegetable spread or you can make your own spread, e.g. a pea spread.

Tip: stacked in a closed lunchbox you can easily transport these pizzas. Reheat them in the oven for approx. 10 min. at 160 °C.

Sweet potato pizza

  • 1 sweet potato, big (approx. 300 g)
  • 75 g pesto, green
  • 125 g mozarella
  • pepper


  • 1)

    Preheat the oven to 180 °C. Wash the potatoes properly and cut them into 1 cm thick slices. Add to a baking tray covered with baking paper.

  • 2)

    Brush the potato slices with the green pesto, leaving ½ cm of the edges free. Cut the mozzarella into small dices and divide over the pesto.

  • 3)

    Bake in the center of the oven for approx. 20 minutes until done. Remove from the oven and sprinkle with freshly ground pepper.
