Grilled cheese, toastie, grilled sandwich or whatever you call it, a toasted cheese sandwich is just the best thing. It’s perfect for lunch, quick dinner or as a hearty snack. This tu­na melt grilled cheese is just delicious, a grilled classic with a twist! The pickles and red onions give a great bite and the sambal spices up the tuna.

I made the grilled cheese in a non-stick skillet, but of course also a classic sandwich toaster will do. With toasties it’s all about the crust so make sure to choose a hearty bread and butter it up (or mayonnaise if you prefer). I made this tu­na melt grilled cheese recipe with gluten-free white bread from Lidl, but basically any white- or toast bread of your likings will do. For this recipe I chose a milder cheese, which fits superb to the tuna. But you could vary with any kind of cheese, for example cheddar, brie or goat cheese.

In the mood for more cheese? Then finish your grilled cheese with a crispy, cheesy outer crust. Simply sprinkle some additional grated cheese over your buttery skillet, and flip the hot sandwich over on top of it.

Tu­na melt grilled cheese

Ingredients

  • 160 g tuna in sunflower oil
  • 2 tsp sambal manis
  • 2 tsp mayonnaise
  • 4 slices gluten-free bread, white
  • 0,5 red onion, small
  • 1 tbsp pickle, cubes
  • 2 slices cheese
  • 10 g butter, unsalted

Method

  • 1)

    Drain the tuna and add to a bowl. Mix in the sambal and mayonnaise and divide over 2 slices of gluten-free bread.

  • 2)

    Cut the red onion into thin rings and divide over the tuna together with the gherkin cubes. Cover each bread with slices of cheese and the rest of the slices of bread.

  • 3)

    Heat a large frying pan. Brush the outside of the sandwiches with butter and fry the sandwiches in 6-8 minutes golden brown, turn halfway through.
