The mash stores well in the fridge for a few days as well as in the freezer, perfect for some meal prep ahead of time.

Ingredients
- 1 kg potatoes
- 2 tbsp mild olive oil
- 800 g leek , sliced
- 30 g butter, unsalted
- 100 ml milk
- 2 tbsp mustard, coarse
- salt
- pepper
- 4 sausages of choice
Method

Peel the potatoes and cut into chunks. Place the potatoes with salt in a large heavy saucepan and add cold water to cover. Bring to a boil. Reduce heat to simmer and cook until potatoes are tender in 14 to 16 minutes.

Meanwhile, heat the olive oil in a frying pan on medium heat and sauté the leeks gently for 4-5 minutes until soft und beginning to brown.

Drain the potatoes. Add the (warmed) milk, butter and mustard and mash the potatoes with a potato masher. Stir the leek in and season with salt and pepper.
- 4)
Serve with a sausage or meat of your likings.
