Delicious coconut muffins made with coconut oil, coconut flour and shredded coconut. These muffins are super fluffy and easy to bake in under 20 minutes. Perfect for any coconut lover.

- 50 g coconut flour, sifted
- 75 g honey, (or maple syrup)
- 3 eggs
- 2 tbsp coconut oil
- 1/4 tsp salt
- 1/2 tsp baking powder, gluten-free
- 3 tbsp dried shredded coconut, (or flakes)
Preheat oven to 200 degrees Celsius.
Grease 6 muffin tins with additional coconut oil and set aside.
Beat the eggs, coconut oil, honey or maple syrup, and salt together in a small mixing bowl. Combine coconut flour and baking powder together and whisk into batter until smooth.
Fill the prepared muffin cups half-way with batter and sprinkle coconut on top.
Bake in preheated oven for 15 minutes, or until golden brown on top and an inserted toothpick comes out clean.
Transfer muffins to a rack and let cool.
