Ingredients
Ribs
- 4 racks spareribs
- 2 onions
- 5 cloves garlic
- water
Dry rub
- 1 tbsp paprika powder
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp brown sugar
- 1 tsp cayenne or chilli powder
- 1 tsp salt
- 1 tsp pepper, black
Method

Remove the membrane from the racks. Cut the spare ribs into 3 equal pieces and put in a large pot. Crush the garlic and half the onions and add to the pot. Add so much water that the ribs are almost covered. Bring to the boil and simmer over a low heat for 30 minutes. Turn down the heat. Let the ribs sit in the stock for at least two hours or leave overnight.

Preheat the oven to 180 degrees.

Mix the paprika powder, garlic powder, onion powder, brown sugar, cayenne, salt and pepper in a bowl. Use a fork to crush any clumps of sugar or seasonings.

Rub the spice-mix into ribs.

Roast the ribs in the oven for approximately 40 minutes, turn halfway.
