For this recipe I used REWE frei von Mehlmischung glutenfrei but you could use Schär Mix It Universal or another high quality gluten-free flour blend.

Baking tools and kitchen utensils

If you’re looking to start baking gluten-free quiches at home, there are a few baking tools that you’ll need to get started. A large mixing bowl, a scale, a dough scraper and measuring cups and spoons are a few basics. A stand mixer or a hand mixer with dough hooks can also be helpful. I just love my KitchenAid Artisan stand mixer and can’t do without, buy here (#ad) on Amazon. Besides, for this recipe you’ll need a springform pan of Ø24 cm.

Gluten-free Zucchini Quiche with Cheese and Chives

Ingredients

Dough

  • 185 g gluten-free all-purpose flour, (e.g. REWE frei von Mehlmischung glutenfrei)
  • 150 ml water, lukewarm
  • 5 g dry yeast, (alternatively 15 g fresh yeast)
  • 1 pinch sugar
  • 1/2 tsp salt
  • oil, for greasing
  • gluten-free all-purpose flour, for dusting

Filling

  • 100 g Greek yogurt
  • 100 ml cream
  • 75 g old cheese, grated
  • 50 g feta cheese, roughly chopped
  • 8 g fresh chives
  • 5 egss
  • 5 g fresh rosemary
  • 2 zucchinis, small
  • 2 tbsp olive oil
  • 1 tbsp breadcrumbs, gluten-free
  • 1 clove garlic
  • 1 red onion

Method

Dough

  • 1)

    For the dough, dissolve yeast and sugar in lukewarm water. Sieve gluten-free flour into a bowl, add the salt and yeast-water and knead into a smooth dough.

    Roll out the dough on a floured work surface and place in a greased springform pan, pulling up a small rim of about 3 cm. Cover and let rest in a warm place for about 30 minutes.

Filling

  • 1)

    Preheat the oven to 200 degrees Celsius conventional heating (top-bottom heat).

  • 2)

    Using a cheese slicer, cut the zucchini into long, wide strips. Remove the needles from the rosemary sprigs and chop finely. Cut the chives into thin rings.

  • 3)

    With a fork, pierce holes in the bottom of the dough and sprinkle with the breadcrumbs.

  • 4)

    Grate the garlic and finely chop the red onion. Beat the eggs with the yogurt and cream. Add the garlic, onion, half of the rosemary, half of the chives and the two cheeses. Season with pepper and salt if desired.

  • 5)

    Spread the filling over the bottom and place the zucchini strips on top in a spiral shape. Work from the center toward the edge to create the shape of a rose. Drizzle with some olive oil and season with pepper.

  • 6)

    Bake the quiche on the middle shelf in the oven for approximately 50 minutes.

    Remove from the oven, sprinkle the rest of the rosemary and chives on top and let the quiche cool in the springform pan for 10 minutes. Serve warm and enjoy!
