This mandarin and almond cake is such a wonderful dessert, made with whole mandarins and almond flour. A delicious twist on a flourless orange cake. This mandarin and almond cake is incredibly moist and bursting with fresh citrus flavor. It’s dairy free too!

Mandarin and almond cake

Ingredients

  • 500 g mandarins, fresh (5-6 medium-sized)
  • 3 eggs
  • 200 g caster sugar
  • 325 g almond meal, (almond flour)
  • 1 tsp baking powder
  • 3 tbsp sliced almonds
  • powdered sugar, for dusting

Method

  • 1)

    Wash the mandarins put them in a saucepan covered with cold water. Bring to a boil. Reduce heat and simmer for an hour.

  • 2)

    Drain, cool and cut mandarins in half and remove seeds. Do this on a plate so you don’t lose any juice or pulp. Put the mandarins (pith, skin, juice and fruit) in a food processor (alternatively use a hand-held blender) and process until pureed and completely smooth. Weigh of 250 grams of puree and set aside.

    Preheat the oven to 170°C conventional heating (top-bottom heat). Butter or oil a springform cake tin and line with baking paper.

    Using an electric mixer, beat the eggs and sugar on a medium high speed until light and creamy. Fold in the almond flour, mandarin puree and baking powder. Mix carefully until well combined.

  • 5)

    Spoon the mixture into the prepared tin and smooth out evenly. Top with sliced almonds.

  • 6)

    Bake for 50-60 minutes or until a skewer inserted into the center comes out clean. If the cake is browning too fast, cover loosely with a sheet of foil.

  • 7)

    Set aside for 15 minutes to cool, then remove from the pan to finish cooling. Optionally dust with powdered sugar.

    This cake is absolutely delicious! It has a beautiful tang to it and is light and airy. I did end up with about a cup of extra puree though so am wondering if anyone has any ideas of how to use this?
