Soft and tasty low-carb bread with psyllium husk and flaxseed. Baked with quark and cream cheese. The low carb bread buns are rich in protein.

Low carb bread buns with sunflower seeds

  • Prep time: 10 minutes
  • Cook time: 20 minutes
  • Total time: 60 minutes
  • Serves: 6


  • 30 g psyllium husk
  • 30 g flaxseed flour
  • 1 tsp baking powder
  • 200 g quark, (or Greek yogurt)
  • 100 g cream cheese
  • 2 eggs
  • salt
  • sunflower seeds


  • 1)

    Mix the psyllium husk and flaxseed flour with the baking powder.

  • 2)

    Add curd, cream cheese, salt and eggs and mix with a hand mixer to a uniform dough.

  • 3)

    Let the dough rest for about 20 minutes.

  • 4)

    Make small buns and place the dough in 6 portions on a baking tray lined with baking paper. Sprinkle with pumpkin seeds and press lightly.

  • 5)

    Bake for about 25 minutes at 160 degrees Celsius until the low-carb buns are golden brown.
