Everything is possible with this tasty pizza variation. Low carb and easy to cook in under 25 minutes. These eggplant bites are perfect as a snack, appetiser or a full meal depending on how many you choose to serve.

Low carb aubergine pizza

  • 2 aubergine
  • 100 g cheese, grated
  • tomato paste
  • 1 garlic clove
  • oregano, dried
  • 2 anchovies filet, diced
  • 50 g ham, diced
  • 1 sjalot, sliced thinly

    Preheat the oven to 200 degrees Celsius.

    Slice the aubergine into 1 cm thick pieces. Sprinkle with some salt and let rest for 10 minutes so the water can substract from the aubergine. Brush off the salt.

    Brush  with a little olive oil and rub with the garlic clove. Place on a baking sheet.
  • 4)
    Spread some of the tomato paste on top of the aubergine slices. Then top with the cheese, onions, ham, anchovies and a sprinkling of dried oregano.

    Bake for 15-20 minutes, until tender.
