Gluten-free Raisin Curd Bread Rolls (yeast-free)

Ingredients

  • 250 g gluten-free flour, (e.g. Schär Mix B)
  • 250 g farmer cheese, low-fat
  • 80 g raisins, chopped
  • 2 tbsp sugar
  • 1 sachet (16 g) baking powder
  • 1 tsp cinnamon
  • 1 egg, medium size
  • 1 pinch salt
  • 1/2 tsp psyllium husk
  • milk, for coating

Method

  • 1)

    Preheat the oven to 220°C conventional heating (top-bottom heat).

  • 2)
    Mix the flour with the baking powder, cinnamon, salt and the psyllium husk.
  • 3)

    Knead the flour mixture, farmer cheese, egg, and sugar into a smooth dough.

  • 4)

    Form a roll from the dough and cut it into 8 equal parts (approx. 80 gram each). With wet hands, form each part into rolls and place them on the baking tray lined with baking paper.

  • 5)

    Place the tray in the preheated oven and bake the bread rolls for approximately 16 to 18 min. After 5 minutes of baking, brush the rolls with milk.

  • 6)

    Tip:

    • Serve the rolls fresh, preferably lukewarm, or freeze and re-bake immediately after cooling.
    • For variety, add chocolate chips, nuts or other dried fruits to the dough.
