Gluten-free Panini breads are one of my favorite sandwiches. This recipe is simple but so delicious. It takes only little time because the rolls do not have to rise. Besides, they are also very nutritious. Serve with some pesto, tomato, basil and mozzarella or any other combination!

Gluten-free Panini

Ingredients

Dough

  • 75 g gluten-free wholemeal rice flour
  • 75 g gluten-free oat flour, (alternatively buckwheat flour)
  • 90 g tapioca flour
  • 8 g psyllium husk
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • 150 g Greek yogurt
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp lemon juice, (alternativly apple cider vinegar)

Topping

  • 2 tbsp milk
  • 2 tbsp sesame seeds

Method

  • 1)

    Preheat the oven to 220 degrees Celsius conventional heating (top-bottom heat). Line a baking tray with baking paper.

  • 2)

    Dissolve the baking soda with lemon juice (or vinegar). Place all ingredients in a mixing bowl and mix well with a mixer with dough hooks to form a smooth dough. The dough may be slightly sticky, let the dough rest for a while so the fibers can absorb the moisture.

  • 3)

    Sprinkle a small amount of tapioca flour on the countertop. Make 3 bigger or 4 smaller balls of the dough, and form into an oval bread roll.
    Tip: grease your hands with a little olive oil to prevent the dough from sticking to your hands.

  • 4)

    Score the buns with a knife and brush with milk. Sprinkle the sesame seeds or another desired topping on top.

  • 5)

    Bake the Panini rolls in about 20 minutes until golden brown. Let the gluten-free Panini breads cool slightly before serving.
