Gluten-free Mini Chocolate Bundt Cakes

Ingredients

  • 200 g gluten-free flour, (e.g. Schär Mix C Pâtisserie)
  • 135 g sugar
  • 115 g butter, at room temperature (alternatively: margarine)
  • 115 ml milk
  • 7 g baking powder
  • 3 eggs, small size
  • 2 tbsp cocoa powder
  • 2 tbsp chocolate chips

  • 12 mini bundt cake pans

Method

  • 1)

    Preheat the oven to 180 degrees Celsius.

  • 2)

    Beat the butter until creamy. Add the sugar and mix until smooth. Add the eggs one at a time. Sift the flour and baking powder. Then, add the flour and milk and mix until well combined and lump free.

  • 3)

    Mix the cocoa powder and chocolate chips into the batter.

  • 4)

    Pour the batter into 12 small bundt cake molds*.

  • 5)

    Bake for about 15-18 minutes until cooked and golden.

  • 6)

    Leave to cool before removing from the bundt cake pans.

  • 7)

    Optionally drizzle with some melted chocolate. Enjoy!
