Gluten-free Chocolate-Coconut Muffins

Ingredients

  • 50 g buckwheat flour
  • 50 g rice flour
  • 50 g coconut flour
  • 100 g coconut blossom sugar
  • 150 ml rice drink (alternatively almond), unsweetened
  • 70 ml sunflower oil
  • 2 eggs
  • 2 tbsp cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • margarine, for greasing

Method

  • 1)

    Preheat the oven to 160°C conventional heating (top-bottom heat).

  • 2)

    Grease the muffin tins with margarine.

  • 3)

    Mix all ingredients in a large bowl using a hand mixer or stand mixer until smooth.

  • 4)

    Fill the muffin tins halfway with the batter.

  • 5)

    Bake for 20 minutes, then let the muffins cool before serving.
