Gluten-free Chocolate Chip Muffins

Ingredients

  • 300 g gluten-free all purpose flour
  • 250 ml milk
  • 150 g chocolate chips, dark
  • 120 g butter, unsalted, melted
  • 120 g sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp baking powder

Method

  • 1)

    Preheat the oven to 200 degrees Celsius conventional heating (top-bottom heat).

  • 2)

    In a bowl, combine the flour, sugar, baking powder, and 120g of chocolate chips. Stir briefly with a spatula to mix.

  • 3)

    In a separate bowl, whisk together the wet ingredients: eggs, milk, melted butter, and vanilla extract.

    Combine the contents of both bowls and use a spatula to mix until just combined; the batter may be slightly lumpy.

    Prepare a muffin tin by lining it with paper muffin cups. Using an ice cream scoop or two spoons, evenly divide the batter among the cups.

    For muffins, I love to have some ingredients visible on top since they aren’t decorated otherwise. In this case, I sprinkled 30 grams of chocolate chips over the muffins before baking.

    Bake the muffins for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.

    Store muffins at room temperature in an airtight container for up to a week.
