Homemade gluten-free burger buns are simple to make and just taste so much better then store-bought buns. These buns are super soft and fluffy and are topped with sesame or sunflower seeds. These gluten-free burger buns are super easy to prepare with only a few ingredients.

For this recipe I used Schär Bread Mix B but you could also use another similar gluten-free flour blend.

Burger buns

  • Prep time: 6 minutes

Ingredients

  • 200 g gluten-free flour mix, (e.g. Schär Mix B Bread)
  • 110 g water, lukewarm
  • 80 g yoghurt, (or buttermilk)
  • 15 g sunflower oil
  • 7 g yeast, dried (or 21 g fresh yeast)
  • 4 g salt
  • 3 g sugar
  • pinch psyllium husk powder
  • 2 tbsp milk
  • sesame or sunflower seeds, for topping

Method

  • 1)

    Dissolve the yeast with the sugar in 110 g of lukewarm water.

  • 2)

    Put flour, psyllium husks, salt, yogurt and oil in a mixing bowl, add the yeast-water and mix with the dough hooks of a hand mixer for 2 minutes at slow speed and 4 minutes at medium speed. Cover the bowl with a cloth towel and let the dough rise for 5-10 minutes.

    Gently knead the dough with lightly dusted hands and weigh it into pieces of about 90 – 100 grams. Shape the dough round and flatten slightly.

  • 4)

    Place on a baking sheet lined with baking paper. Brush with milk, sprinkle with sesame or sunflower seeds and cover with a cloth towel. Let the buns rise for one to two hours, until doubled in size.

  • 5)

    Preheat the oven to 200 degrees Celsius conventional heating (top-bottom heat). Place the buns in the oven and bake for 20 to 25 minutes.
