It’s time for another mashed potato recipe! This carrot and onion mashed potatoes with bacon is super simple and tasty too! The mash stores well in the fridge for a few days as well as in the freezer, perfect for some meal prep ahead of time.

Hutspot is a typical Dutch dish with carrots, potatoes and onions. This Dutch classic becomes even more delicious with crispy bacon on top! This combination of mashed vegetables is traditionally served with crispy bacon, smoked sausage or braised beef.

Carrot and onion mashed potatoes with bacon

Ingredients

  • 1 kg potatoes
  • 600 g carrots
  • 400 g onions, white
  • 250 g bacon, cubes
  • 100 ml milk, semi-skimmed
  • 50 g butter, unsalted
  • salt

Method

  • 1)

    Peel the potatoes and carrots and cut into chunks. Cut the onion into pieces. Place the vegetables with salt in a large heavy saucepan and add cold water to cover. Bring to a boil. Reduce heat to simmer and cook until potatoes are tender in 20 minutes.

  • 2)

    Meanwhile, heat a frying pan without oil or butter and fry the bacon over medium heat for 7 minutes until crispy. Keep the bacon fat and put the bacon on kitchen paper.

  • 3)

    Drain the vegetables. Add the (warmed) milk and butter and mash the potatoes with a potato masher. Add the bacon fat and stir into the mash. If necessary, season with salt.

  • 4)

    Serve with the crispy fried bacon.
