This broccoli soup is super delicious and healthy. Broccoli is a low-calorie source of fiber and it’s also rich in many essential vitamins and minerals such as vitamin C, B vitamins iron, magnesium and much more.

Try this healthy soup alongside some toasted gluten-free bread or a grilled cheese sandwich. Also great as a starter for a simple dinner. This soup is gluten-free, vegetarian and easy to cook in under 25 minutes. I’ve topped the soup with some leftover ham from the fridge. Just leave this away if you are making the soup vegetarian or top with some cheese instead.

Broccoli soup

  • 700 g broccoli
  • 1 onion
  • 1 clove garlic
  • 2 tbsp sunflower oil
  • 600 ml vegetable stock, (or beef stock)
  • 150 ml heavy cream
  • 1 potato, medium
  • salt
  • black pepper


  • 100 g ham, cooked or smoked

    Cut the broccoli into florets and the stem into small pieces. Dice the onion and garlic.

  • 2)

    In a large pot, heat the oil over moderately low heat and gently fry the onion and garlic for 2 minutes.

  • 3)

    Add, broccoli and stems, potatoes, broth, water, salt, and pepper. Bring to a boil. Reduce the heat and simmer until the vegetables are almost tender, about 10 minutes.

  • 4)

    Add the cream and puree the soup with an immersion or hand blender. Add some stock or water to get your desired consistency.

  • 5)

    Season with salt and freshly ground black pepper.

  • 6)

    Optionally serve with cooked or smoked ham, the dish isn’t vegetarian anymore then.
