Ingredients

  • 2 bananas, ripe
  • 185 g gluten-free flour
  • 85 g sugar
  • 40 g walnuts, chopped
  • 1 tbsp (7g) baking powder
  • 50 ml margarine or butter, melted
  • 1 egg, small
  • 1 tbsp milk
  • salt

Method

  • 1)

    Preheat the oven to 175° degrees Celsius.

  • 2)

    Puree the bananas with a hand blender or fork. Add the margarine, egg and milk and mix well.

  • 3)

    Add the sugar, baking powder, walnuts and a pinch of salt to the banana mixture and combine well.

  • 4)

    As last add the flour to the banana mixture and combine well into a sticky dough.

  • 5)

    Spread the dough over the muffin pan and bake the muffins in the middle of the oven for 25 minutes until lightly golden brown.
