Gluten-free apple nut crumble pie

Delicious gluten-free apple nut crumble pie made with sweet apples and a walnut-almond crumble.

This apple pie with nut crumble makes a fabulous dessert but is also great for afternoon tea. Serve with some whipped cream or ice cream.

For this recipe I used Schär Pâtisserie Mix C but you could also use another similar gluten-free flour blend.

Gluten-free Apple Nut Crumble Pie

Ingredients

Dough

  • 350 g gluten-free flour mix, (e.g. Schär Mix C Pâtisserie)
  • 200 g butter
  • 140 g caster sugar
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • 1 pinch salt

Filling

  • 4 apples, (e.g. Elstar, Jonagold, Golden Delicious or Goudrenets)
  • 50 g raisins
  • 2 tbsp caster sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp cinnamon

Topping

  • 50 g mixed nuts, (e.g. walnuts or almonds)
  • 1/4 dough

Method

  • 1)

    Add all the ingredients for the dough to a mixing bowl and knead into a firm dough.

  • 2)

    Preheat the oven to 180 degrees Celsius conventional heating (top-bottom heat).

  • 3)

    Grease the springform pan and line the bottom with baking paper.

  • 4)

    Knead the dough a little more and roll out three quarters of the dough. Use this to line the bottom and sides of the springform pan.

  • 5)

    Remove the cores from the apples and cut the apples into parts. Put the apple parts in a bowl and mix in the cinnamon, lemon juice, cornstarch and caster sugar. When everything is well mixed, add the raisins.

  • 6)

    Add the apple filling into the pie pan and press the filling firmly.

  • 7)

    Coarsely chop the nuts and mix them together with the remaining dough until crumbs form.

  • 8)

    Spread the nut crumble over the apple mixture.

  • 9)

    Bake the apple pie for about 60 minutes. If the top of the pie gets too dark, cover it with a piece of aluminum foil.

  • 10)

    Let the pie cool outside the oven before removing the springform pan.
